SHiFT in the KiTCH – Samantha’s Buddha Bowl
It is said that the Buddha embodies “grace, balance, compassion, wisdom, determination & courage” – and the same thing can be said about our Rockstar Instructor Samantha Parsons.
Growing up a dancer in South Africa, Samantha is now an educator, motivational speaker, intrepid entrepreneur, mother of three and an all around font of inspiration. With multiple degrees and soaring accomplishments, Samantha strives for balance and beauty in all her endeavors.
Samantha can be found in both New Haven and Guilford. Her rides are powerfully fueled by an understanding of movement and meaning. She leads the inspirational Kids and Adaptive rides and gave our SHiFTers EPIC adventures through genius “Star Wars” and “Game of Thrones” theme rides!
Ever the Artist, Sam finds a blank canvas in her kitchen in which to create healthy rounded colorful and fun meals.
THE BUDDHA BOWL is one of Sam’s faves. It’s an exquisite articulation of zen and zeal – grains, vegetables, proteins all work in concert together giving you a nutritious and noble culinary experience.
Samantha’s Bounty Buddha Bowl Suggestions
- Roast a medley of root vegetables, carrots, turnips, sweet potatoes, with olive oil and sea salt
While the vegetables roast –
- Add 2 cup dried quinoa to 4 cups water with olive oil for flavor, bring to a boil, then turn down heat and cover for 20 minutes
- Add some fresh tahini and lemon juice (or try walnut and spinach pesto)
- Top with chick peas and crunchy kale chips
